Palomino from California might sound unusual, but in the hands of Rajat Parr, it's something rather unique. There's about 5% of the total wine made up of a field blend of local grapes, but this is a Palomino at heart.

Rajat has taken inspiration from the heritage of this grape, and in 2023 we see him direct press the grapes into old Sherry botas and French Oak, where it is then left to age. This is a lovely fresh take on Palomino, with abundant notes of tropical pineapple, candied papaya and a lick of coconut. There is a wonderful saline quality from the ex Sherry botas, and a nutty, grassy finish that goes on for days.
