Palomino from California might sound unusual, but in the hands of Rajat Parr, it's something rather unique. There's about 5% of the total wine made up of a field blend of local grapes, but this is a Palomino at heart. Playing to the heritage of this grape, it is fermented in old Sherry barrels and French Oak. There's a partial skin contact, which gives some weight, and brings out some of the tropical flavours and a lovely texture. There's a salinity and freshness here still, with a bite of white pepper.
