One of the most inovative of Muri's latest creations - Koji Rice Series 1 marks the first release of three expressions designed to showcase the nuanced complexities of Koji fermentation. The Koji rice wine is infused with gently aromatic Mahleb and Kefir of Lavender, which is smoked in house over beechwood to add subtle depth. This is a still style with a beautiful roundness, and off-dry touch. A versatile umami-led drink that holds its own alongside aromatic, exotic flavours or can even be paired effortlessly with desserts.
